At Kanefuku, we are passionate about making wholesome products with delicious flavor. High-quality mentaiko depends on securing the freshest and finest ingredients. Rather than outsourcing the ingredient procurement to another company, we source all of the ingredients ourselves. We manage the process from gathering the roe from locally caught Alaska roe to transporting and processing the ingredients at our facility.
Even the most skilled chefs cannot create fine dishes without quality ingredients. The fine flavor of our mentaiko is derived from our commitment to sourcing the finest raw fish roe.
The Granulating Process
Not only do we source the finest ingredients, but we also involve skilled artisans throughout the manufacturing process. Our finely-tuned granulating process is what gives the mentaiko its granular texture. Rather than outsource this process to another company, we handle it in-house with a team of artisans who carefully check the maturity, elasticity, gloss, and firmness of each skein of raw roe.
This process ensures the best granularity and texture possible and produces the finest quality mentaiko for our customers.

Our fresh, raw roe is carefully selected, brined, and pickled in matured seasoning sauce before being freeze matured and drained. Completed mentaiko undergoes a quality check in our laboratory to ensure proper flavor, contents, and hygiene before being packaged and shipped.
